My apologies for only posting one recipe in the month of March. Due to health issues (my husband), the days flew by, since I added “nurse” to my other duties. Yet, I’m happy to say that all went well and he’s home resting.

As I try to play catch-up with everything, I’m delighted to share that I’ve turned in my first round of edits for DRAGON KNIGHT’S RING! Ahem…that’s all I’m going to blurt out for now. More to follow in the coming months. Don’t want to spoil anything for you, my wonderful friends.

Since my husband’s appetite has dwindled (although I’m sure it will return in force soon), I’ve been making light meals–homemade soups, hummus and vegetables, salads, and the snack below served with slices of salami. Have I mentioned that salami is his favorite? Yep, most definitely!

Bruschetta with Blue Cheese and Honey

1 baguette loaf, cut into slices

¼ cup extra virgin olive oil

8-10 ounces Blue Cheese

3 tablespoons honey

Preheat oven to 400 degrees. Arrange the baguette slices on a baking sheet. Brush with olive. Bake until the bread is pale, about 8 minutes.

Arrange the cheese on the toasts and bake until the cheese is melted, about 3 minutes.

Drizzle the toasts with honey and serve.

    Yummy recipe!!!!!!!!!!!!!!!! So glad your “Knight in Shining Armour” is feeling better and on the mend.
    (The spelling of ‘armour’ is a tip of the hat to the King’s English versus our American spelling.)
    Am eagerly awaiting Book 5!!!! It will be another delightful tale I am sure.

    • Thanks so much, Anne! Yes, absolutely thrilled all is going well with my “Knight”. Must mention, too…you can swap out the blue cheese for feta. Great with either of these cheeses.
